Chicken Fajita Recipe
Ingredients:
1. Tortillas
2. 1/3rd onion
3. Bell pepper
4. About 20 mushrooms
5. 2 cloves garlic, minced
6. Salt & pepper to taste
7. Salsa, pico de gallo, or combo
8. Grated cheese blend
9. Ancho, cumin, oregano, basil
10. Olive oil
11. Marinated chicken fillets*

Instructions:
1. Heat up skillet, add olive oil (I use remaining marinade below in this example), and start cooking sliced onion, later add sliced bell pepper and garlic, then mushrooms.
2. When it looks right, remove and set aside.
3. Now start cooking the chicken. Be careful to cook it just so: enough to be white inside, but not tough.
4. Remove and cut into small pieces or strips.
5. Lay out portions of chicken, above ingredients, and cheese. Roll each tortilla.
6. Microwave each fajita and top with sour cream and any accent like chives or cilantro.

* Chicken Marinade:
About 2 lbs or more of chicken fillets: breast or thigh.
½ cup olive oil
½ cup Balsamic vinegar
¼ cup soy sauce
¼ cup Worcestershire sauce
1/8 cup lemon juice
Abut Tbl. honey
2 tsp fresh Rosemary
2 Tbl Dijon, or if out, 3 tsp. yellow mustard seed powder
2 tsp. garlic powder
½ tsp. Himalayan salt
Ground Pepper

Instructions:
1. Mix all together.
2. Place in baggie or container, and add chicken. Marinate 4-12 hours.
