Chili Recipe

Sure, everyone has a chili recipe. Try this. One of the great things about chili is you can make it on a budget and still eat gourmet. The one below has some higher-end stuff, but also bargain ingredients. Makes a good pot of meatless chili. I’ve found that meat anyway is lost in the overall flavor, so not worth the extra expense. Let’s get to it. A bit on the mild side by chili standards, but you can always bump it up afterward.

Ingredients:
1. A couple of onions (red, yellow and/or white), and bell pepper, finely diced
2. 6 cloves of garlic, minced
3. One Jalapeno and an Anaheim chili pepper, finely diced
4. (optional: small tub of roasted green chili pepper; may substitute cayenne or chili powder
5. ¼ cup Worcestershire sauce
6. Pinch of garlic powder
7. 2 bouillon cubes, beef or chicken
8. 14 oz. canned tomato sauce, 14 oz. can of diced tomato
9. 8 oz. can of tomato paste
10. ½ cup white wine
11. Either a small tub of green chili, or 2 Tbl. of chili powder/cayenne 12. 2 Tbl. of cumin ground from seed (store-bought is inferior)
13. 1-3 Tbl. cilantro, fresh or dried
14. 1 Tbl. of Liquid Smoke (which takes care of that meat flavor)
15. (optional: 1 Tbl. chipotle powder, 3 Tbl. cilantro fresh or dried)
16. 1-2 Tsp. of fresh or dried https://www.kustomrides.com/oregano-leaf.html" target="_blank">oregano and basil
17. (optional: 1 tsp. turmeric)
18. (optional: sliced black olive and sautéed mushrooms)
19. Tbl. of honey
20. 14 oz. cans of black, red and pinto beans

Instructions:
1. In a large pot, heat olive oil after you have diced the onion, peppers, garlic, and cook them until softened, low to medium heat. While you’re cooking, might as well put in some of the spices. Add the wine and Worcestshire toward the end. Stir on the regular.
2. Add cans of tomato, as well as crushed bullion, rest of the spices, honey: everything. Cook covered, stirring as needed, until it’s nice and bubbling.
3. Add the beans and stir in. Cover and simmer, stirring occasionaly.
4. Toss in some cheese if you want, like Parmesan or what you like. Stir more, and let rest for a bit. Serve hot or refrigerate for later. Add sour cream if you want.
