Game Hen Recipe

Ingredients


1-2 Game hens, frozen
Salt & pepper
Paprika
Thyme leaf.
Ground cumin
2 bay leaves for each bird
Ground sage leafGround, or chopped fresh<.br> Chopped fresh rosemary
Home-made Italian dressing

Instructions:


1. Thaw game hen(s) just enough to make it easier to split from the breastbone down. Allow to thaw out further, then wash.
2. Sprinkle with spices (except bay leaf), beginning with the ground and then to the chopped leaf.
3. Douse baking dish (or skillet if using that for a makeshift oven, in which you put a cast iron skillet atop a grill on top of a propane burner, or skillet atop the cast iron skillet) with Italian dressing. Place bird, skin side down, and splash that with more dressing. Put Bay leaves under each wing. Heat over to 325F, or stove burner on low.
4. Place in baking dish and cover with foil. If going stovetop, warm up the iron skillet and place top skillet on top, covered. Bake for 45 minutes to an hour. Remove and skim off excess oil. Turn bird skin side up. Return to cooking, 45 minutes. Remove and skim off oil. May add BBQ sauce on top. Return to cooking, uncovered, about 15-20 minutes. Serve. May be refrigerated and reheated later. Side dish is your choice. You can use the reduced liquid as a gravy, or use to sautee your side dish of broccoli and mushroom.
