French Fry Recipe



Fried in an iron skillet. Use two Russet potatoes, cut into about ¼ inch slices.

French fry seasoning:


1. 2 tsp. onion salt
2. 2 tsp. smoked paprika
3. 1 tsp. garlic powder
4. ½ tsp. dried oregano
5. ½ tsp. dried thyme
6. ½ tsp. dried basil
7. ½ tsp. ground pepper
8. ¼ tsp. crushed red pepper red pepper flakes

Instructions


1. Heat up skillet, add about 4 Tbl. olive oil.
2. Dust cut fries with paprika, add to skillet. You’ll probably have to do two batches.
3. Brown well on all sides. Remove to paper towel to drain of oil. Sprinkle with seasoning above.

Fish & Chips Recipe

1. Fries as above.
2. Fish batter: 1 cup flour
3. ½ cup milk, or ¼ cup heavy cream with ¼ cup water
4. About ¼ to ½ cup water
5. 2 Tbl. baking powder
6. 1 tsp. Himalayan salt
7. One beaten egg

Whisk ingredients above. Warm up small pot of vegetable oil, or deep fryer if you have one. Take white fish fillets and dip into batter.
Place the battered fillets in the hot oil, but don’t crowd. Fry about 2 minutes per side (they will float as they boil, so turn over to finish.
Sprinkle some malt vinegar, like London Pub, on them.
